Abstract [en]

The project is based upon research about the production and consumption of food in Eskilstuna and its surroundings. The most common crop grown today are grains. These grains, however, are not consumed locally. Instead, it is sold on a global market to the highest bidder. The consequence of this economic model is a separation between the rural and urban parts of the Eskilstuna region, despite the closeness between the farms and the city centre. My project aims to end this separation.

Grains, the group of crops that has been a vital part of human history, become the main focus of the project. It is stored in the building, and baked to bread in massive wood fired ovens, built in masonry. Wrapped around the ovens one can find vertical communication and technical facilities. Together they form giant bodies of masonry. These bodies of masonry also function as loadbearing elements for the rest of the building. The wood fired ovens are used both by professional bakers, an urban occurrence in the Nordic history of baking, and by the public in ”bagarstugor”, a rural form of baking found in the north of Sweden.

Projektet baseras på undersökningar kring produktion och konsumtion av livsmedel i Eskilstuna med omnejd. Det kan konstateras att det överlägset vanligaste livsmedlet som i dag produceras i regionen är spannmål. Detta spannmål konsumeras dock inte lokalt, utan säljs i stället till högstbjudande på en global marknad. Det finns med andra ord ingen relation mellan livsmedelsproducenter och konsumenter, det vill säga mellan landsbygd och stad, i Eskilstuna, trots att gårdarna och åkrarna ligger dikt an mot stadsväven. Denna separation var något som projektet syftade till att överbrygga.

Spannmål, som den världshistoriskt viktiga gröda den är, får i mitt projekt en plats för förvaring och bakning. Bakningen äger rum i stora murade, vedeldade ugnar, runt vilka även vertikal kommunikation och teknisk försörjning slingrar sig. Dessa tegelkroppar får även en huvudsaklig bärande funktion för resten av huset. Bakning bedrivs både professionellt genom ett bageri, en historiskt sett urban företeelse, och av allmänheten genom bagarstugor, som är en vanlig rural typologi i främst norra Sverige.
